These are much beloved cookies within our little Italian neighborhood.  They are very light weight cookie prepared with pure almond paste then topped with the finest tasting pignoli nuts shipped in from Spain.  Many places use lesser quality pignoli nuts resulting in a bitter taste, but . . . not us!
